cookies + milk = giveaway

a recipe for comfort cookies and a book GIVEAWAY is the perfect combo to kick off this blog about our journey to learn and live with more environmental responsibility.

first things first, let’s talk about the cookies. while these are not natural or organic, they are semi-homemade and have to be marginally better than the artificial ingredients in the real deal. obviously mine aren’t going to win any presentation awards either, but they sure tasted good with a big o’ glass of organic whole milk.

Chocolate Sandwich Cookies

  • 2 boxes devils food cake mix
  • 4 cage free eggs
  • 2/3 cup organic applesauce
  • 8 ounce package of cream cheese, room temp
  • 1/2 cup butter, room temp
  • 3 cups confectioners’ sugar
  • 1/2 tsp. vanilla

Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a large bowl combine the cake mix, eggs, and oil with a mixer. The batter will be very stiff. Pinch of pieces of batter, roll into 1 inch balls, place 1 inch apart on prepared cookie sheets and flatten slightly with fingertips. Bake for 8 to 10 minutes. Remove immediately from the cookie sheets and cool on a wire rack.  

In a small glass bowl, combine the cream cheese and butter until completely blended. Gradually add in the sugar and vanilla and mix until the icing is smooth. Spread half of the cookies with icing and top with remaining cookies. Thanks to Green Cattle Beef for posting this yummy recipe!

  3. I can totally relate to your desire to feed your family better food and the challenges that come along with that. Picky toddlers, carnivorous husbands and grocery budgets immediately come to mind. Great idea for a blog!

  4. I bet you didn't even know that I read your blog?!?! I have been reading haus von yarger for a while now and love it! You make me smile and inspire me, too! I wish I had it in me to blog but I don't, so I live vicariously through you! I am so glad you are starting this one now. We have been turning "green" slowly but surely for the past couple of years and it has been great! There are always new things to learn, though. Looking forward to gaining more insight about saving our planet and keeping it healthy for our kiddos!
